Le Flamant Rose

A culinary experience in a friendly setting in the heart of Martinique

Le Flamant Rose offers a varied menu featuring dishes from around the world, prepared directly in our kitchen by Cheffe Mathilde Pelizzo.

Our restaurant is open for lunch and dinner from Monday to Sunday, from 12:00 p.m to 2:00 p.m for lunch and form 7:00 p.m. to 9:30 p.m. for dinner.

Our head chef

Driven by a passion for cooking cultivated early within a family of food lovers, our chef discovered her calling one Christmas Eve. Disappointed by store-bought yule logs, she decided to make them herself—an experience that sparked her decision to pursue a career in gastronomy, with the desire to create and convey emotions through every dish.

Her journey has taken her to prestigious establishments in France and abroad. After serving as Executive Chef at a 5-star hotel in Abidjan, she joined the Michelin-starred restaurant Le Vivier in L’Isle-sur-la-Sorgue in 2024, before continuing in 2025 as Seasonal Head Chef at Stella D’Oro in Bonifacio. Today, she leads the kitchen at Flamant Rose, where creativity, finesse, and generosity shine through every creation.

The Bar

Local flavors and relaxing moments by the water 

Every day from 11 a.m to 11 p.m, our team will help you discover local cocktails, Clément rums and other beverages in a warm atmosphere by the pool or with your feet in the water.

Breakfast

Continental breakfast by the pool. 

Every morning from 7am to 9:30am, Le Flamant Rose serves a continental breakfast by the pool. 

As soon as you arrive at the hotel, we'll give you a chance to think about your custom-designed breakfast. You'll have a choice of hot drinks, local fruit juices, breads, pastries, eggs, cold meats, cheeses, yoghurt, fruit salad and jams.
